1. Preheat oven to 350 degrees. Spray 2-8x8 round cake pans (or
1-9x13 glass dish) with nonstick cooking spray and set aside. Peel
and mash bananas. Set aside.

2. Mix butter and sugar together to combine. Add in eggs and
vanilla. Mix again until light and fluffy. Stir in mashed banana. Add
in half the flour, leavenings and salt. Stir until just combined, then
stir in half the milk. Finally stir in remaining flour and the last of the
milk. Scrape sides and bottom of bowl and stir again to ensure an
even batter.

3. Pour evenly into cake pans. Bake 25 minutes or until cake springs
back when touched. Or you can check it with a toothpick. Remove
from oven and cool 15 minutes in the pans before trying to remove
cakes. Invert cake pans onto a cooling rack and remove. (They
should pop right out if you sprayed your pans well enough!) Cool
completely.

4. For frosting, stir all ingredients together until light and fluffy and
smooth. Place one cake onto serving platter and fill with frosting.
Top with remaining cake and frost completely. Top with sprinkles
and serve.
add 1 teaspoon white vinegar to your milk to make it sour
