In same pan, using the beef fat, cook poblanos
over medium high heat. Add another ts of EVOO
if needed. Cook for 2 minutes or until
slightly blistered. Add garlic and cook for
about 30 seconds until fragrant. Set aside
with ground beef.
In same pan, heat another ts of EVOO. Add
onions, carrots and thyme. Season with salt
and pepper. Cook over medium heat for 5
minutes until softened. Add beef and poblanos.
Add diced tomatoes. Let simmer for 10 minutes
