     Healthy Falafel

Ingredients
1 cup dry chickpeas
1 tsp baking soda
1 small white onion, chopped
4 tbsp chopped flat leaf parsley
2 tbsp chopped cilantro
1 tbsp minced garlic
pinch of salt
1/2 tsp ground cinnamon
1/4 tsp cayenne pepper
 
2 tsp ground cumin
juice of a small lemon
1 tbsp flour
1/2 tsp baking powder
2 tbsp tahini paste

Instructions
Put 1 cup dry chickpeas in a bowl w/ cold water & 1 tsp baking soda stirred in- let sit overnight. The following day drain & rinse the chickpeas & combine in a food processor w/ the rest of the ingrediants. Cover and let sit in the fridge for a couple of hours. Take about 2 tbsp of the mix and form into patties. Cook on a pan until golden brown on each side, no oils needed.
