     Dutch Oven Hashbrown Bake

Ingredients
1 lb. Pork Sausage
1/2 tsp. Red Pepper Flakes
1 Tbsp. EVOO
1/2 tsp. Garlic Salt
1/2 tsp Italian Seasoning
1/4 tsp each Cayenne and Black Pepper
5-6 Large Potatoes, Diced
4 Large Eggs
5-6 Slices Muenster, Cheddar or American Cheese
 
(Optional) Diced Green Bell Pepper
(Optional) Diced Tomato

Instructions
Heat EVOO in Dutch Oven, begin to cook diced potatoes. (You will not be cooking them fully, just giving them a head start). Add spices, making sure to coat potatoes as thoroughly as possible. Allow to cook, stirring occasionally.
While they are frying, thoroughly brown pork sausage in separate pan. (This should take 15 minutes or so) Once browned, combine with potatoes. Continue cooking mixture.
Crack all eggs into the pan used for the sausage. Scramble, and make certain they are in smallish pieces. Once cooked, add to mixture.
Stir thoroughly, to mix all ingredients. Add any optional items you choose at this time. Layer cheese on top of mixture. Cover with ovenproof lid, and cook for 30 minutes at 400 degrees.
Serving Suggestions
Serve like breakfast, with OJ and fruit on the side.
