     Chilis Rellanos

Ingredients
1 can whole green chilis or (8 parboiled)
1 lb monterey jack cheese
1/2 lb cheddar cheese
5 eggs
1/4 c flour
1 1/4 c milk
1/2 tsp salt
pepper to taste, liquid red pepper to taste, paprika
 

Instructions
Rinse seeds from chiles and pat dry. Lay chiles on bottom of 9x12 casserole dish. Then jack cheese, then chiles, then cheddar cheese. Beat eggs, gradually add flour, beating until smooth. Add milk, salt, pepper. Beet thoroughly. Pour egg mixture over all . Bake uncovered at 350 degrees for 45 minutes.
