1 lb. ground beef or 93 percent lean ground turkey
1 tsp. chili powder
salt and ground black pepper
Eight, 8 inch flour torillas, room temperature
15 oz can refried beans
1 Cup grated cheddar
frozen corn, optional
Salsa, Guacamole and Sour Cream to serve
Instructions
Heat oven o 400 deg. Coat a 9 X 13 baking dish with cooking spray. In a large skillet over medium-high heat, heat the oil. Add onion and garlic and saute for 4 minutes. Add beef or turkey and saute until browned, about 6 minutes.
Sprinkle with chili powder and stir. Sprinkle with salt and pepper and remove from heat.
Spread about 2 Tbl. of refried beans onto tortilla. Spoon about 1/4 Cup of meat mixture in a line near the edge of the tortilla closest to you. Sprinkle this with about one Tbl. cheese.
Roll the tortilla starting with the edge closest to you until you have a log. Place into prepared pan, then repeat. Scatter the remaining cheese over the tops of the burritos, then bake for 15 minutes, or until lightly browned at the edges. Serve with salsa, guacamole and sour cream.
