     Crispy fish cakes

3/4 lb cod fillets (or other white fish)
1 tsp olive oil
1 tbl minced green pepper
2 tbl minced onion
1 tbl minced pimientos
2/3 c fine bread crumbs
1/2 tsp dry mustard
1/2 tsp worcestershire sauce
3 tbl mayo
1/4 tsp paprika

Arrange fish in single layer in lightly greased baking dish. Bake covered in pre-heated 375 degree oven. 10-15 minutes, until fish flakes. Cool fish. Flake into small pieces. Heat olive oil in skillet. Add onion, green pepper and pimento. Saute until onions are soft. Mix together fish, onion mixture, 1 tbl bread crumbs, mustard, Worcestershire sauce and mayo. Add more mayo if necessary to hold together. Form into four round flat patties. Mix remaining bread crumbs with paprika, gently coat cakes on both sides with bread crumbs. Place fishcakes on a baking sheet coated with non-stick spray. Bake at 450 degrees until golden brown (about 10 minutes)
