     Mushroom Barley Soup

Ingredients
1/2-3/4 c. pearled barley
2-3 kinds, 1 lb. mushrooms (sliced)
3 c. carrots (sliced)
6 c. low-sodium veggie broth
2 cloves garlic (minced)
1 T. parsley
1 medium onion (diced)
3 stalks celery
1-2 c. water if needed
 
2 T. olive oil
S & P to taste

Instructions
Heat oil over med-high, sauté onion and garlic
Add mushrooms, carrots, & celery until tender (10-15 min.)
Add broth and barley, simmer 30-35 minutes
Top with parsley
