     Chicken Chile Verde

Ingredients
6 boneless chicken breasts
3 C chicken broth
1 onion in large pieces
4 garlic cloves
1 lb tomatillos, husked and rinsed
4 jalapeno chiles, seeded and coarsely chopped
1 tbsp olive oil
1/4 C raw pepitas
3/4 C loosely packed fresh ciantro
 
1/2 tsp cayenne
1/2 tsp cumin
2 tbsp fresh lime juice
1 tsp sugar
garnish..shredded lettuce, crumbled queso fresco, avacado sliced
and fresh cilantro

Instructions
Season chicken with salt and pepper. In large pot combine chicken, broth, half of onion and 2 garlic cloves ...heat to boiling on med-high. As broth comes to a boil with spoon remove any scum that rises to surface. Reduce heat to maintain simmer, cover and simmer about 50 minutes. Meanwhile, preheat oven to 400... Line rimmed baking sheet with foil and add tomatillos, jalapenos,remaining onion and remaining 2 garlic cloves. Toss with oil to coat. Roast about 20 minutes or until vegetables are tender and beginning to caramelize. add pepitas and roast 5 minutes longer.
Transfer tomatillo mixture to food processor, add cilantro, cayenne,cumin and lime juice, puree until smooth. Season with salt and pepper. When chicken is cooled. strain broth through fine mesh sieve discarding solids. Return broth to pot and simmer about 10 minutes or until reduced. When reduced remove from heat and stir in chicken and tomatillo puree . Heat to simmering on medium about 5 minutes. Season with salt, pepper and 1 tsp sugar. Serve with tortilas and garnishes...delicious!!
