1/4 c quick cooking long grain (such as jasmine or basmati) rice
1T coconut oil
1 1/2 lb ground pork, turkey or chicken
juice of 2 large limes
1- 2 tsp. salt
1 tsp. pepper
2 tsp. aleppo chile pepper
2T fish sauce
2T tamari
2 c shredded cabbage
1/4 c mint, finely chopped
1/4 scallions, finely chopped
Instructions
In large skillet, heat coconut oil over medium
heat. Add rice and cook until well toasted (3 - 5
min.). Add ground meat, juice of one lime, salt
and pepper. Cook until meat is no longer pink and
cooked fully.
Transfer meat to large mixing bowl. Add juice of
one lime, aleppo chile flakes, fish sauce, tamari
scallions and cabbage. Toss well to fully incorporate.
Taste for salt and add if desired. Sprinkle with mint to garnish
before serving.
