     Greek yogurt twice-baked Sweet Potato

Ingredients
Direction are for 1 sweet potato, multiply as needed
2 T plain greek yogurt
1 1/2 tsp sugar free maple syru[
1/4 tsp cinnamon
pinch of nutmeg
pinch of salt
raw organic sun dried goji berries
 

Instructions
Directions are for 1 potato, multiply as needed. Cut sweet potato into 3 thick slices. Bake at 400 for 50 minutes flipping once midway. Scoop out the insides, mash & mix w/ the rest of the ingredients. Gently spoon mixture back into shells. (can refrigerate for up to one day). Bake for an additional 20 minutes. I topped mine with a few sun dried goji berries.
