Makes 8 muffins. Whisk coconut flour, baking soda and salt
together. Add the eggs, 1/3 cup yogurt, and 1/2 cup maple
syrup. Blend well. Let batter sit a few minutes. For the topping
mix the cinnamon, 1/4 cup honey, and 2T yogurt. Fill muffin
liners a quarter way with the batter. Add a T of topping to each
muffin. Top off each with more batter. Drizzle remaining topping
over each muffin. Use a toothpick to blend topping into muffin
batter. Bake muffins at 350 for about 20-23 minutes.
