Simmer Eggs (do not boil) for 15 minutes, then
plunge immediately into ice-water to cool. Peel
and chop.

Peel very large Potato and cut into 3/4 inch
cubes. Cover with water and boil about 8 minutes,
or until just fork-tender. Drain in colander until
cool, but still a little warm.

|
Mix all other ingredients except paprika very well in a mixing
bowl. Then add eggs and potatoes and mix gently
but thoroughly.

|
Cover with plastic wrap and chill for several
hours. Serve sprinkled with paprika.
