     (OZ) OLD-FASHIONED POTATO SALAD

Ingredients
1 very Lg. RUSSET POTATO
1/4 sm. sweet VIDALIA ONION - diced
2 large EGGS - hard cooked
1/2 cup real MAYONAISSE
2 teas. SWEET PICKLE RELISH
1 1/2 teas. DIJON MUSTARD
1 teas. PARSLEY FLAKES
3/4 teas. PAPRIKA
1/2 teas. SALT
 
1/2 teas. WHITE SUGAR
1/4 teas. WHITE VINEGAR
1/4 teas. coarse BLACK PEPPER
1/8 teas. CAYENNE PEPPER
1/8 teas. CELERY SEED

Instructions
Simmer Eggs (do not boil) for 15 minutes, then plunge immediately into ice-water to cool. Peel and chop.
Peel very large Potato and cut into 3/4 inch cubes. Cover with water and boil about 8 minutes, or until just fork-tender. Drain in colander until cool, but still a little warm.
Mix all other ingredients except paprika very well in a mixing bowl. Then add eggs and potatoes and mix gently but thoroughly.
Cover with plastic wrap and chill for several hours. Serve sprinkled with paprika.
Serving Suggestions
Serve with picnic or bbq food
