Cook 1/2 cup brown lentils following the package directions.
With 5 minutes left of cooking the lentils heat 1/2 onion
chopped, 1/4 tsp minced garlic, and 2 chopped carrots in a
large skillet on medium heat for 5 minutes. Add 1 T curry
powder and heat an additional minute. Add drained lentils and
1 8 oz can tomato sauce to skillet. Mix and heat for 5 minutes.
Salt and mix again. Serve warm. I ate mine with toasted Whole
Foods 12 grain bread made in store. Makes 2 servings.
