Brown 1 pound ground beef, plus 1 chopped onion,
and drain. Add to saucepan tomatoes, vegetables,
tomato sauce, and seasoning. Simmer for 5-10
minutes, until everything is warm and flavors have
integrated. Transfer mixture to oven-safe
casserole dish, and layer mashed potatoes on top,
to cover entirely. Generously sprinkle grated
cheese on top. You may need more or less potatoes
and cheese, depending on the size of your dish.
Bake 20-30 minutes at 350 degrees, or until cheese
is melted, and brown around the edges.
Remove from oven, and allow to cool 5-10 minutes
before serving.
