     Indian Stuffed Peppers

Ingredients
2 red, orange or yellow bell pepper
1/2 lb of ground beef
1/2 of a yellow onion
1Tb curry powder
1Tb garam masala
1/2 of a carrot
1/4c of peas
1 bunch of parsley
3/4c basmati rice
 
3Tb EVOO

Instructions
Preheat oven to 350 degrees. Halve and core the bell peppers. Drizzle EACH half with 1/2Tb EVOO and season with salt and pepper. Place on baking sheet and roast for about 20-30 minutes until tender and browning. Set aside.
Finely chop the onions and carrots. Chop the parsley, separating stems and leaves. Heat 1Tb of EVOO in large pan (that has a lid) over medium heat. Add ground beef and season with salt and pepper. Cook until no longer pink. Set aside but save the grease in the pan.
In same pan, add onions and carrots. Cook until tender. Add curry powder and garam masala. Cook for about 30 seconds until fragrant. Then add rice and parsley stems. Cook for about 1 minutes until toasted. Add 2c of water. Bring to boil, then reduce to simmer and cover. Cook for about 15 minutes until rice is tender. After, add cooked ground beef, peas and parsley leaves. Taste and season with salt and pepper. Cook until peas are warm.
Stuff the roasted peppers with the rice mixture. Serve.
