     Cauliflower, Pomegranate & Pinenut salad

Ingredients
1 cauliflower head
60ml olive oil
1 tbs Zaatar
I cup flat leaf parsley, roughly torn
1 cup mint, roughly torn
1/4 cup pine nuts, lightly toasted
1/2 pomegranate seeds
1/3 cup golden raisins
 
60g Tahini
2 tbs lemon juice
2 tbs greek sytle yogurt
1 garlic clove

Instructions
Preheat oven to 200 degrees. Combine cauliflower and leaves, oil and zaatar in a large bowl. Transfer to two large oven tray lined with baking paper and cook for 50 mins. Shake occasionally.
Dressing - whisk all ingredients - tahini, lemon, yoghurt and garlic in a bowl. Season with salt and pepper.
Combine cauliflower, herbs, pine nuts, pomegrante, raisins and dressing.
