     Stovetop Macaroni & Cheese

Ingredients
3 tbsp butter (I use salted)
onion (chopped or minced)
2 tbsp flour
1 1/4 cup shredded cheese
1 cup milk or 1/2 milk and 1/2 heavy cream
1/2 tsp salt
1 1/2 cup macaroni noodles
1/4 tsp pepper
sausage, hotdog, or ham (optional)
 
mustard to taste (optional)

Instructions
In a medium saucepan, cook macaroni according to package. Drain and set aside. Saute onion in the butter, add milk, salt, pepper and flour and whisk together over medium heat, stirring constantly, until thickened. Add cheese. Stir until smooth. Combine noodles and sauce. Stir in meat. Sprinkle additional cheese. Sprinkle with additional cheese if desired.
To make a larger serving, 1 lb noodles cooked with 1/2 tbsp salt, 1/4 cup butter, 1/4 cup flour, 1 cup milk, 1 1/4 cup heavy cream, 1 tsp salt, 1/2 tsp pepper, 2 cups cheese (add 1/2 to 1 cup more on top)
