Instructions
These bad boys are great when you just aren't feeling cereal AGAIN. I find these are easier to make while I'm already making breakfast. So when you are making a yummy sandwich, whip up half a dozen or so and freeze em.
Cook your bacon and english muffins as you normally would. Scramble your eggs with a touch of water and pepper. (salt makes your eggs flat so always add it after the eggs are cooked.) I like to cook the eggs in a skillet at lowish heat like its an omelet. Then when the egg disc is cooked through you can use a cookie cutter for your perfect sandwich egg size.
Stack your ingredients into yummy little sandwiches and wrap them in wax paper, then in foil then all together in a plastic bag. The extra layering keeps everything the freshest.
As you want one you can take one out unwrap the foil and pop it in the microwave with the wax paper still on it. This will steam it so it doesn't get hard. Breakfast bowls can be made this way as well, just layer ingredients into a tupperware bowl and stack in the freezer. You can also freeze yogurt in a muffin tin. When ever you want a smoothie just pop one into the blender with your fruit, milk, sugar, protein, whatever and you're good to go.
