     Wild Rice Bowl with Asparagus

Ingredients
1 c. wild rice (uncooked)
1 bunch asparagus, chopped and sauteed
1/2 lb. cremini mushrooms, sliced and sauteed
4 poached eggs ( 1 per serving)
DRESSING
3 T. extra-virgin olive oil
Juice of 1/2 lemon
2 T. chopped dill
 
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. red pepper flakes
1/14 tsp. ground black pepper
Grated Parmesan

Instructions
Cook rice.
Cook asparagus, mushrooms and eggs.
Combine all dressing ingredients and whisk together.
Divide all onto four plates; drizzle with dressing. Add Parmesan on top, if desired.
