     Akoori (Parsi eggs)

Ingredients
Onions - 1 large chopped
Garlic ginger paste - 1/2 tsp
Turmeric, coriander and cumin powders - 1/4 tsp each.
Serranos - 1 or 2 chopped fine
Tomatoes - 1 medium chopped
cillantro - 1 full sprig - washed well and chopped fine.
salt to taste - approx 1 tsp
5 to 6 eggs - beaten
optional - 1 tsp sugar.
 

Instructions
-In a saucepan, heat 1 tbsp veg oil, then saute onions until light brown. -Reduce heat to medium-low and add garlic-ginger paste. Fry for a minute -Add seranos and fry for a minute. -Add the Turmeric, corriander and cumin powder and cook for about two minutes. If it sticks to the pot add some water. -Now add the tomatoes. Cover and cook till toms are soft. - Add cillantro and salt and cook for an additiona 3 to 4 minutes on medium heat. - Just before serving add eggs. Cook till done stirring constantly. -Garnish with cillantro.
Serving Suggestions
Parsi akoori can be had with burun pav (toast) or rotlis (tortillas). Weekend breakfast in our home often meant a big dish of akoori!
