     Jeweled Cabbage

Ingredients
Veg oil - 1 tbsp
Mustard seeds - 1/2 tsp
2 stems curry leaves (optional)
serranos - 1 or 2 chopped fine
Coleslaw cabbage - 1 package
Finely sliced red or green bell pepper - approx 1/2
salt to taste
Roasted peanuts - 1 tbsp for garnish whole or chopped
 
~ Large wok or skillet with tight-fitting lid.

Instructions
- In a large wok or skillet, heat oil overe high heat for a minute. - Add mustard seeds and cover quickly. - After about half minute when the seeds stop popping uncover, reduce heat to medium low & immediately add serranos and curry leaves. Cook for a minute or so. -Add bell peppers and cook for a minute, Stir often. - Now add 1/2 the cabbage and salt. After a minute add the rest of the cabbage. Stir-fry until the cabbage is reduced to half and is soft but not too soft - approx 3-4 minutes. - Spoon into a serving dish and garnish with peanuts. -
Serving Suggestions
This dish can be eaten with rotlies ( tortillas) or naan (Indian bread). My kids favorite!!!!
