-Bring 1 bottle Curry paste, 1 to 2 cups water, brown sugar and coconut milk to a
boil.
- Add chicken and all the vegetables. Add salt to taste.
- Cook until done - approximately 15 minutes.
-Serve with rice.
For Rice-
- Place rice in a bowl with plenty of cold water and swish with
fingers. Drain. Repeat process 4 or 5 times.
- Boil a pot of water - approx 4 to 5 cups. Add 1 cup of rice.
Cook on medium flame UNCOVERED till rice is cooked
thoroughly. Approx 15 minutes.
Drain rice in colander and let cold water run through - This will
keep the rice from sticking and seperate each grain.
Pour the rice into a microwave safe serving dish.
Garnish with basil leaves.

This is a wonderrful one-dish meal! The chicken can be substituted with shrimps. You can make green or Panang curry using the same method.
