     Cheddar Biscuits w/ Chive Butter

Ingredients
FOR CHIVE BUTTER
1/2 stick butter, softened
3 Tbsp minced fresh chives
1/4 tsp cayenne pepper or hot sauce
FOR CHEDDAR BISCUITS
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
 
6 Tbsp cold butter
1 1/4 cup shredded cheddar cheese
1/4 cup shredded parmesan cheese
1 cup buttermilk
1 egg, lightly beaten

Instructions
MAKE CHIVE BUTTER- Mix together all ingredients until well blended.
MAKE BISCUITS- Preheat oven to 450.
Combine flour, baking powder, baking soda, and salt in a bowl. Cut in butter with a pastry blender or two knives just until mixture resembles oatmeal. Add cheeses and toss to coat. Add buttermilk and stir just until mixture is moistened. Turn dough onto a floured work surface and gently knead 6 to 8 minutes, just until dough, comes together. Roll dough into a 9 inch square (1/2 inch thick) with a floured rolling pin. Cut dough lengthwise into 4 strips, then crosswise into 6 strips. Transfer biscuits to an un-greased 12x17inch baking sheet. Brush biscuits with beaten egg.
Bake biscuits until golden, about 15 minutes. Transfer to a rack and cool 15 minutes or until warm. Serve with chive butter.
