     Grilled Salmon with Strawberry-Cucumber Salsa

Ingredients
4 salmon filets (6 ounces each, skin removed)
Marinade
1/2 cup strawberry or cranberry juice from concentrate
1/2 cup red wine vinegar
1/4 cup lime juice
2 tablespoons sugar
1/2 teaspoon salt and 1/4 teaspoon ground black pepper
1/2 tablespoon fresh ginger, rough chopped
Zest of 1 orange
 
Salsa
4 large ripe strawberries, diced small
1/2 cucumber with skin, diced small
2 tablespoons yellow bell pepper, diced small
1/8 teaspoon fresh ginger, finely minced
2 tablespoons honey
2 tablespoons lime juice
1/2 teaspoon salt and 1/4 teaspoon ground black pepper
1 tablespoon canola oil

Instructions
Whisk together marinade ingredients and pour over the salmon filets. Marinate for approximately 2 hours in the refrigerator.
Combine all salsa ingredients and set aside. Grill salmon filets to desired doneness, approximately 12 minutes each. Top each filet with salsa and enjoy!
