Beat eggs and oil together for two min. Add dry ingredients, (flour
last) Mix with mixer. Add flour last and just stir in. Add fruits
and stir. Add nuts.

Line bottom of 15 x 10 x 1 pan with parchment paper. Pour in
batter and bake 20 to 25 min. at 350'

|
While cake is baking, slowly toast coconut in a dry frying pan.
Make a double batch of cream cheese frosting.

|
|
Cut cake into loaf size pieces. Stack, frosting between each layer
with cream cheese frosting. Frost top of cake. sprinkle with
toasted coconut.
