     Sauteed Salmon with Yogurt Sauce

Ingredients
1/2 cup plain nonfat greek yogurt
1/2 cucumber, peeled, seeded and finely chopped
2 tsp grated lemon zest
1/4 tsp cracked pepper
4 salmon fillets (6 oz each)
1 tsp greek seasoning
1 Tbsp olive oil
1 pkg (7.2 oz) herb and butter rice a roni
2 Tbsp chopped fresh mint
 

Instructions
Combine yogurt, cucumber, 1/2 tsp zest and pepper, reserve. Sprinkle each salmon fillet with 1/4 tsp greek seasoning. In nonstick skillet, heat oil over medium, high heat. Add salmon, skin side up and cook until browned, 3 to 4 minutes. Reduce heat to medium.
Carefully turn salmon over and cook until opaque in centers, 4 to 6 minutes. Transfer to plate. Add rice mix to drippings in skillet over medium heat. Cook, stirring occasionally until golden brown, about 2 minutes. Stir in 2 1/2 cups water and bring to a boil. Reduce heat to low, cover and simmer 15 minutes.
Stir in seasonings packet from rice mix and remaining 1 1/2 tsp zest. Cover, simmer 10 to 15 minutes until rice is tender and liquid is absorbed. Stir in mint.
Let rice stand, covered, 5 minutes before serving. Transfer to platter, top with salmon and sauce.
