     Carrot Cake

Ingredients
4 eggs
2 c. sugar
1 1/2 c. oil
2 c. flour
2 t. soda
2 t. cinnamon
1 t. salt
3 c. grated carrots
1/2 c. chopped nuts (optional)
 
1/2 c. raisins or dates (optional)
Frosting-
1 pound box of powdered sugar
2 t. vanilla
1/2 stick margarine
8 oz. package cream cheese
milk (enough to spread easily)

Instructions
Cream together eggs, sugar and oil. Add dry ingredients and blend well. Stir in carrots and if desired, add nuts and raisins. Pour into oblong cake pan and bake at 300 degrees for approximately 1 hour or till done. Cool completely, then frost.
