     Rice Pilaf

Ingredients
2 tsp extra virgin olive oil
1/2 medium white onion, peeled and diced
2 cloves garlic, peeled and finely chopped
1 cup long grain white rice
1 1/2 cups water
1 Tbsp chopped thyme (optional)
Salt and pepper
 

Instructions
Preheat oven to 350 degrees. Heat oil in a medium, oven-safe saucepan over medium heat. Add onions, garlic and thyme, if using; saute until onions are translucent, about 2 minutes. Add rice and saute with onions for another 2 minutes. Add water, season to taste with salt and pepper and bring to a boil. Cover and place saucepan in oven for 18 minutes.
Remove rice from oven using hot pads. Fluff with fork and divide among plates. Serve hot.
