     Salted and Sauteed Eggplants

Ingredients
2 eggplants
2 tbsp grated ginger
1 tsp salt
1 tbsp sesame oil
1 tsp nam pla (Thai fish sauce)
 

Instructions
Cut the eggplants in half, then cut each half into slices. Rub in the salt, then leave for 5 minutes. Heat the frying pan over medium heat, then add the sesame oil followed by the grated ginger. Squeeze the excess water from the eggplants. Add the eggplant to the pan, then add nam pla to taste.
