Ingredients
1/2 cup water
1/4 cup chopped fresh parsley
1 tbsp extra virgen olive oil
1/2 tsp sea salt
1/2 tsp freshly ground black pepper
2 garlic cloves minced
dash of saffron threads
1 pound small red potatoes
 

Instructions
Combine all ingredients in a medium saucepan over medium high heat. Bring mixture to a boil. Cover and reduce heat to medium low, cook 20 minutes or until potatoes are tender.
