     Best Ever !!! Rubarb Muffines

Ingredients
2 -1/2 cups of flour
1 tsp baking soda
1- 1/2 tsp baking powder (will make them more fluffy)
1/2 tsp salt
1- 1/4 cup brown sugar
1/2 cup vegetable oil (use apple sauce to decrease calorie count)
1 egg
1 tsp vanilla extract
1 cup of butter Milk (to make home made take 1 cup of milk and add 1 tbsp vinegar)
 
1 -1/2 of diced rhubarb
1/2 cup of chopped -walnuts or pecans if desired.
Topping applied before baking-
1/2 tsp butter or margarine- followed by
1 tsp ground cinnamon- followed by
sprinkle of brown sugar

Instructions
Preheat the oven to 350 degrees F (175 degrees C). Grease two 12 cup muffin pans or line with paper cups.
In a medium bowl, stir together the flour, baking soda, baking powder and salt. In a separate bowl, beat the brown sugar, oil, egg, vanilla and buttermilk with an electric mixer until smooth. Pour in the dry ingredients and mix by hand just until blended. Stir in the rhubarb and walnuts. Spoon the batter into the prepared cups, filling almost to the top.
to the top of each muffin add a dab of butter or margarine, a sprinkle of brown sugar and ground cinnamon
Place in a Preheated oven for 25minutes Depending on how full you fill the muffin tins you will get 16-24 muffins
