     Chicken Fried Rice

Ingredients
1 large chicken breast
Bragg's Liquid Aminos
1 c white rice
1 small can sweet peas, drained dry
1/2 can sliced water chestnuts, chopped
1 egg, beaten
Black pepper
 

Instructions
Cut chicken breast into small dice. Pan fry in a tiny amount of butter and/or coconut oil, just enough to keep it from sticking to the pan. Add Bragg's Liquid Aminos and stir while cooking the chicken to absorb the flavors. I did this the day before and kept overnight in the refrigerator.
RICE SECRET - Cook in microwave earlier in the day!! Place 1 c rice, 2 c water and salt into a very large microwave safe bowl and cover with two layers of saran wrap. Microwave on high 5 minutes, then at power level 5 for 15 minutes. Let sit until cooled, then fluff.
Heat stir fry pan, then add a small amount of butter, coconut oil, or both - just enough to keep the egg from sticking. Pour in the beaten egg and scramble quickly, breaking into small pieces. Dump bowl of cooled rice, sprinkle with black pepper and a bit of Bragg's. Toss to mix.
Add in cooked chicken pieces and toss. Press mixture down and let it fry for a minute or two, then repeat. When mixture is hot, add peas and water chestnuts and heat through, pressing down to crisp rice a bit. Add Bragg's to taste.
