     Chili

Category   Salads - Soups - Sidedishes
Sub Category   None

Ingredients
1 pound ground beef, browned or boiled, drained and crumbled
1 medium onion, finely chopped
2 cups cooked elbow macaroni, optional
1 quart tomato juice
1 pint stewed tomatoes
2 (15.5 ounce) cans red beans
3 Tablespoons chili powder, add more or less to taste
1/2 to 1 teaspoon cumin (start with the 1/2 teaspoon)
1 Tablespoon salt, add more or less to taste

1 teaspoon garlic powder
2 teaspoons dried basil
2 teaspoons dried oregano
5 - 8 cups water, depending upon how soupy you want it

Instructions
Combine all ingredients in a large pot. When adding the stewed tomatoes, slice the tomatoes with a knife into bite sized chunks. Cook on medium to low heat until heated through. Reduce heat and let simmer for about an hour or longer. Serve hot with crackers or peanut butter sandwiches. (I also like to add 1 Tablespoon sour cream, 1/2 small chopped onion, 1/4 cup shredded cheddar cheese to my bowl.)
