Put the 2 sheets gelatine soaked in cold water for 10 minutes. Using the liquidiser, whisk the strawberries until pureed. Take some tablespoons of the puree in a pan and leave aside. Add to the Liquidiser with the puree, the cream,lemon juice and sugar (optional), whisk until fully combined. Crush 6 chocolate wafers and mix it with the honey. Divide equally the wafer mixture into 3 wine glasses to use as a crust. No need to press, just put some at the bottom of the glass. Put aside. Meanwhile take the gelatine sheets from the water and squeeze the excess liquid. Heat the remaining pure'e in the pan, take it from heat (not boiling) and add the gelatine and stir to dissolve. Once dissolves, add the mixture to the liquidiser with the other puree mixture and whisk till combined. Pour the strawberry mousse into the wine glasses equally. Crush the other 2 wafers and decorate the top with them and a strawberry in the middle. Chill at least 4-5 hours before serving. Enjoy, it's delicious! -)
