Wash potatoes and pat dry; prick each potato
several times with a fork. Arrange potatoes end
to end and one inch apart in a circle on paper
towels in the microwave. Microwave on high for
15 minutes, turning and rearranging after 6
minutes. Let potatoes stand for five minutes
before removing them from the microwave. Cut
potatoes in half, lengthwise. Scoop out pulp,
leaving shells intact. Set shells aside. Mash
potato pulp in a large bowl using a fork or
potato masher. Add milk or yogurt and beat at
low speed with an electric mixer until smooth.
Add salt and pepper and mix thoroughly. Stuff
each potato shell with potato mixture. Top each
with cheese and sprinkle with paprika. Bake at
350 degrees for 5 minutes or microwave on high
for 30 seconds or until cheese melts.
