Sift flour with sugar four times. Yes, sift with
sugar four times. Then in a separate bowl, beat
egg whites, cream of tartar, salt and vanilla on
high with an electric mixer until egg whites are
stiff enough to form soft peaks. Add remaining
sugar to eggs only 2 Tablespoons at a time,
beating after each addition. Sift about 1/4 of
the flour over egg whites and fold in. Fold in
remaining flour - adding each addition in
fourths. Pour into a ungreased Angle Food cake
pan. Bake at 375 degrees for 35 to 40 minutes.
