Peel and chop tomatoes.
Cover and simmer 10 minutes.
Add lemon juice, grated lemon rind, cinnamon, and ginger. Stir fruit pectin into the prepared tomato mixture. Use a large heavy pot, no more than 1/3 full, to allow space for boiling the tomatoes.
Bring to a full boil, stirring constantly. Stir in the sugar all at once. Stir and bring to a full rolling boil. Then boil hard 1 minute, stirring constantly.
Remove from heat. Skim off foam. Ladle into hot sterilized jars. seal. Process for 15 minutes. Check seals before storing.
