     Butternut Squash Curry

Ingredients
a. 1 butternut squash
b. handful green onions, choppped
b. tablespoon vegetable oil
b. 2 tablespoons tomato paste
b. tablespoon red curry poweder
b. 2 teaspoons cumin
b. tablespoon red curry paste
b. 3 cloves garlic, crushed
c. 1 can coconut milk
 
c. 3 tablespoons fish sauce
c. 1.5 tablespoon brown sugar
c. handful basil leaves, chopped

Instructions
Cut squash and cook in 350 oven for 35 minutes. Chop into chunks once cooled.
Combine B and heat for about 5 minutes.
Add C mixture and the cooked squash. Simmer for 20 minutes
