1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

3 garlic cloves, chopped
|

1/3 cup mild or medium salsa
|
|
2 tablespoons olive oil
|
|
1 teaspoon chipotle chili powder
|

1 teaspoon chipotle chili powder

1/2 teaspoon ground coriander
|
|
1 1/2 teaspoons salt
|
|
1 teaspoons freshly cracked black pepper
|

flour tortillas, to serve
|

fresh cilantro, for garnish

Instructions |
|
|
1. Preheat oven to 400 degrees F. In a large bowl, toss the chicken,
veggies, salsa, olive oil, and spices together. Toss to coat.

2. Spread the seasoned chicken mixture on a large rimmed baking
sheet.
|
|
|
3. Bake until chicken is completely cooked through and vegetables
are tender, about 25 minutes. Serve in flour tortillas with fresh
cilantro leaves.
