     Sheet Pan Chicken Fajitas

Ingredients
1 pound chicken breasts, cut into strips
1 yellow onion, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
3 garlic cloves, chopped
1/3 cup mild or medium salsa
2 tablespoons olive oil
1 teaspoon chipotle chili powder
1 teaspoon chipotle chili powder
 
1/2 teaspoon ground coriander
1 1/2 teaspoons salt
1 teaspoons freshly cracked black pepper
flour tortillas, to serve
fresh cilantro, for garnish

Instructions
1. Preheat oven to 400 degrees F. In a large bowl, toss the chicken, veggies, salsa, olive oil, and spices together. Toss to coat.
2. Spread the seasoned chicken mixture on a large rimmed baking sheet.
3. Bake until chicken is completely cooked through and vegetables are tender, about 25 minutes. Serve in flour tortillas with fresh cilantro leaves.
