     Shepherd's Pie

Ingredients
2 pounds potatoes, cubed
2 Tbsp sour cream or softened cream cheese
1 egg yolk
1/2 cup cream (can substitute vegetable or chicken broth)
Salt and pepper
1 Tbsp oilive oil
1 3/4 pounds ground beef or lamb
1 carrot, chopped
1 onion chopped
 
2 Tbsp butter
2 Tbsp flour
1 cup beef broth
2 tsp Worcestershire
1/2 cup frozen peas
1 tsp sweet paprika
1 Tbsp parsley leaves

Instructions
Boil and mash potatoes. Add sour cream, egg yolk and cream to the potatoes and mix well.
While potatoes boil, cook ground beef. Season with salt and pepper. Add chopped carrot and onion to the meat. Book veggies with meat 5 minutes.
In a second small skillet cook butter and flour on medium heat for 2 minuets. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.
Fill a casserole dish with meat mixture and top with potatoes. Top potatoes with paprika.
