     Vegetable Chili (Stage 2)

Ingredients
1/2 lb. chicken breast
1 lb. extra lean ground beef
3 stalks celery, chopped
1 cup chopped bell pepper
1 cup chopped onoin
1 1/2 cup chopped mushrooms
1/2 cup minced parsley
2 1/2 tsp. cumin
1 1/2 tbsp chili powder
 
5 cloves garlic minced
1/4 tsp pepper
1 1/2 tsp oregano
1/2 tsp crushed red pepper flakes
28 oz. can petite diced crushed tomatoes, lower sodium
6 oz. can tomato paste
6 oz. water
15 oz. can lower sodium tomato sauce

Instructions
Brown chicken and beef in a large Dutch oven or soup pot. Add celery, pepper, onion, mushrooms, and parsley. Cook until vegetables begin to soften. Add seasoning, tomatoes, tomato sauce, tomato paste and water. Mix well and simmer for at least one hour.
Makes 6 servings/ 14 ounces each
