To make the citrus dressing, combine all ingredients in a screw top jar then shake well.
Cook chicken breasts, turning until browned all over. Remove from the pan and cover to keep warm.
In a large bowl, place cannellini beans, red onion, cucumber, capsicum, coriander and mint. Toss to combine.
Serve the cannellini bean salad topped with sliced chicken. Drizzle with citrus dressing.
