     Chicken & Cannellini bean salad

Ingredients
500g of chicken breast fillets
Can cannellini beans, drained & rinsed
1 sml red onion, halved & thinly sliced
1/2 cucumber, halved & thinly sliced
1 red capsicum, thinly sliced
1/2 cup of fresh coriander leaves
1/2 cup of fresh mint
CITRUS DRESSING
 
1 teaspoon of orange rind, finely grated
1/2 cup of orange juice
1 tbsp of olive oil
1 teaspoon of white wine vinegar
1 clove of garlic, crushed

Instructions
To make the citrus dressing, combine all ingredients in a screw top jar then shake well.
Cook chicken breasts, turning until browned all over. Remove from the pan and cover to keep warm.
In a large bowl, place cannellini beans, red onion, cucumber, capsicum, coriander and mint. Toss to combine.
Serve the cannellini bean salad topped with sliced chicken. Drizzle with citrus dressing.
