     Chocolate Sponge Sandwich

Ingredients
Cake-
4 eggs at room temperature
150g caster sugar or normal sugar (used 100g)
50g cocoa powder
100g self-raising flour
1 teaspoon rum essence
Filling-
2 boxes of 180g each Philadelphia Medium Fat Soft Cheese Light
1 cup chopped fresh strawberries - some to decorate
 
2 tablespoons sugar, or add some more if you want it sweeter
1 teaspoon vanilla essence (optional)
1 teaspoon strawberry essence
1 small plain chocolate

Instructions
Chocolate Sponge Sandwich- With Cream Cheese Strawberry Filling And Frosting
Method- Cake Beat eggs into bowl, whisk lightly, add sugar and whisk until thick, creamy and almost white in colour. Lightly fold flour into mixture. Place in a well greased baking tin. Bake in moderate oven 180c for about 30 minutes or when you insert a skewer it will comes out clean. Meanwhile make the Cream Cheese Strawberry Filling- Wash and chop strawberries. Beat cream cheese, add vanilla essence, strawberry essence and sugar. Mix well, add the chopped strawberries and continue mixing with an electric mixer till smooth. Put in fridge for a while. When the cake has cooled, slice and spread the cream cheese strawberry filling, leave some for Frosting. Decorate with strawberries and grated chocolate. Enjoy -)
