     Zucchini Tomato Gratin

Ingredients
1 c bottled strained tomatoes. Passata.
1 T pesto
2med zucchini silced in rounds 1/8 inch thick on a mandolin
1 or 2 tomatoes sliced 1/8 inch thick on a mandolin
1 1/2 tsp Italian seasoning
1/4 tsp salt
1/2 tsp fresh ground pepper
1/4 to 1/3 cup crumbled feta cheese
 

Instructions
Mix passata and pesto together. Pour into a shallow casserole dish. Mix Italian seasoning salt and pepper together. Pat zucchini dry between two tea towels. Toss zucchini with Italian dressing. Layer zucchini and tomatoes into casserole dish on an angle so there is like a 1/4 of the zucchini and tomato slices are submergerd in sauce. If you have a few extra toss em on top. You will place like 4 or five zucchini slices and then a tomato slice. Repeat till used.
Bake in a 425 degree oven for 18 to 20 min. Turn oven to broil and top casserole with feta cheese. Broil for 4 or 5 min till the cheese is warmed and turning golden. Let rest 5 to 7 min to set and cool.
Have served this with fish chicken lamb steak and pork.
