Preheat oven to 375F
Slice your zucchini in half lengthwise, so you have 4 total boats
Use a spoon to scoop out the inside of the zucchini boats, keep the boat about 1/4 inch thick, and transfer insides to a bowl
Combine pasta sauce and garlic with the zucchini flesh
Transfer zucchini mixture back into the boats, dividing mixture evenly between the four boats
Sprinkle mozzarella and parmesan on top of the boats
Lay tomatoes on top of cheese as desired
Bake for 15 to 20 minutes, until zucchini are tender and cheese is melted
