     Chicken Parmesan Soup

1/4 Loaf of French Bread
2 tbs EVOO
3 tbs Garlic and Herb Rub
1 1/2 C. Unsalted Chicken Broth
2 C. Spaghetti Sauce
1 Can of Diced Tomatoes w/ Garlic and Onions
2 1/2 Cups Diced Cooked Chicken Breast
3 Garlic Cloves
1 oz. Parmesan Cheese
3/4 C Shredded mozzarella divided

Cut bread into cubes (about 2 cups). Toss bread cubes with evoo and rub. Place in baking dish.
Microwave bread cubes, uncovered, on high 3-4 minutes or until they begin to brown, stir every minute. Spread coupons on parchment paper to rest.
Stir stock, remaining rub, marinara sauce, tomatoes, chicken and garlic into dish. Microwave on high 11-13 minutes or until soup is hot. Remove soup and top with Parmesan cheese and half Mozzarella Cheese and half croutons. Top with remaining cheese
Let stand, covered, 2-3 minutes or until cheese is melted. Serve with remaining croutons
