     Kale Salad with Fennel

Ingredients
1 lg bunch kale ribs removed and chopped into med bite size pcs
1 apple sliced thinly
1 medium bulb of fennel sliced thinly oon a mandoline
3 oz or 1/3 cup crumbled goat cheese
1/3 cup dried cranberries
1/4 cup pepitas (pumpkin seeds) toasted on med low heat till starting to pop
Dressing
1/4 cup olive oil
 
1 tsp lemon zest
2 T lemon juice
1or 2 T maple syrup to suit your taste
2 tsp Dijon mustard
1/8 tsp salt
several twist of fresh pepper

Instructions
Place chopped kale into a lg bowl. Add some dressing and massage the kale to help soften. I refrigerate at this point to let the dressing do its magic on the kale. Half an hour before serving add rest of salad ingredients and more dressing if needed. This was even good the next day. Apple did not change colour. The cheese did sort of melt into the salad and disappear so if I was concerned about this would serve the cheese on the side. Either way this salad was delish
