     Dairy free raspberry and coconut muffins

Ingredients
200g plain flour
2 tsps baking powder
150g caster sugar
0.5tsp salt
25g dessicated coconut - extra for sprinkle
100ml sunflower oil
1 egg
150ml coconut milk
150g raspberries (fresh or frozen)
 

Instructions
Preheat oven to 200c or gas mark 6. Line or grease tray.
Combine dry ingredients in a bowl. In a jug, combine wet ingredients.
Make a well in middle of dry ingredients and gradually add wet mix. When smooth, fold in th raspberries. Spoon into tin and sprinkle with ccoconut.
Bake for 20-25 minutes
